It is a by-product of starch production. Maize oil is in fact originally contained in the germ of maize seeds. By applying mechanical pressure, maize oil is extracted from the germ.

Maize oil has a high smoke point. This makes it a valuable ingredient for frying, as it only produces smoke at very high temperatures.
